Job Summary
Responsible for cleaning and sanitizing all cookware, service ware, and kitchen surfaces. This role supports the culinary and food & beverage teams by ensuring the kitchen is clean, organized, and ready for daily operations, while maintaining the highest standards of safety and sanitation.

Essential Duties and Responsibilities

  • Promptly sort and clean all soiled dishware, cookware, and utensils by hand or using commercial dishwashing equipment.

  • Operate and maintain dish machine in accordance with hotel and health department standards.

  • Clean and sanitize kitchen equipment, floors, oven hoods, and other surfaces to meet health and safety requirements.

  • Keep dish machine filled with clean water and ensure proper chemical levels.

  • Wash kettles, tilt skillets, pots, pans, and other large equipment so chefs can work efficiently.

  • Empty trash bins over ¾ full, clean and sanitize them, and return them to designated areas.

  • Perform deep cleaning tasks as assigned and assist with special kitchen projects.

  • Ensure floors are dry and safe to prevent slips and falls; remove debris and separate linen.

  • Organize and restock the dish area to maintain an orderly and efficient workspace.

  • Follow all sanitation, safety, and food handling guidelines.

  • Report any unsafe conditions, spills, or equipment malfunctions to the supervisor.

  • Adhere to all hotel policies and safety procedures.

  • Maintain a neat, clean, and well-groomed appearance at all times.

  • Turn in lost and found items and assist other kitchen staff when needed.

  • Perform additional tasks as requested by management.

Qualifications

  • Hold or be in the process of obtaining a valid Food Handler Card.

  • Ability to operate commercial dishwashing equipment and understand written instructions for chemicals and equipment.

  • Knowledge of safe handling, cleaning, and storage of kitchen equipment and service ware.

  • Basic understanding of English required for safety communication and task instruction.

  • Prior dishwashing or kitchen cleaning experience preferred but not required.

Physical Demands

  • Must be able to stand for extended periods and move continuously throughout the shift.

  • Regularly lift and carry up to 50 pounds; occasionally lift or move items up to 70 pounds.

  • Manual dexterity required for operating dish equipment and handling dishware.

  • Frequent bending, stooping, twisting, reaching, and pushing/pulling dish carts (up to 100 lbs).

  • Must be able to grasp, lift, and carry dishware, trays, and cleaning supplies safely.

  • Constant talking, hearing, seeing, smiling, and maintaining focus in a busy kitchen environment.
